Soak the chickpeas overnight and then transfer them to a pressure cooker along with water, tea bag, cinnamon, bay leaf, salt and baking soda. 2. Close the lid and cook the chickpeas for 2-3 whistles on a medium low flame. 3. Remove the cinnamon stick, bay leaf and tea bag. Keep the chickpeas aside. 4. Take oil in a wide kadai and add the whole spices. Add onions and saute until they are golden brown in colour. 5. Now add the ginger garlic paste and saute. Add in the tomatoes, green chillies and cook until they are soft and mushy. 6. Add turmeric powder, red chili powder, coriander powder, cumin powder and garam masala. Mix well and add salt. Mix again. 7. Add the cooked chickpeas and water. 8. Close the kadai and cook the curry for 10 mins on a medium flame. 9. Add the anardana powder, kasuri methi and ghee. 10. Mix well, turn off the stove and transfer it to a serving bowl. 11. Garnish with chopped coriander and ginger juliennes. 12. Serve it hot with freshly made hot pooris or bhature. In this video we will see how to make Channa Masala in Tamil. This Channa Masala recipe is very easy to make and Channa Masala gravy is an ideal side dish for chapathi. For this gravy we need to soak the konda kadalai (chick peas) for 8 hours prior to start of the recipe. This soaking helps the chickpeas to cook easily. This channa masala can also be served with chapathi, poori, roti, parotta etc. In order to thicken the gravy I smashed some of the chickpeas and added them back to the gravy this thickens it. Also to obtain a smooth texture I ground the onions and tomatoes after sauteing them. But this is optional and you can proceed with the recipe without grinding it. This is a limited time offer for my viewers. *EASY RECIPE, FEEDS 4-6* 2 14 oz (400g) cans chickpeas, drained 1 14 oz (400g) can crushed tomatoes 1 4 oz (100g) can diced chiles 1 tablespoon garam masala 1 teaspoon onion powder 1 teaspoon garlic powder 1 teaspoon dried ginger salt oil vinegar or lemon juice fresh cilantro (optional) Heat a little oil in a pot over medium heat and fry the garam masala until fragrant. Stir in the chiles, tomatoes, chickpeas, garlic powder, onion power, ginger powder and enough water to cover everything. Simmer 20-30 minutes until thickened, taste and add salt and lemon/vinegar to taste, and stir in some cilantro leaves. Serve over basmati rice. *HARDER RECIPE, FEEDS 4-6* 1.5 cups (500g) dried kabuli chana (or other chickpeas) 1 large onion 2-4 fresh chiles 3-4 fresh tomatoes (or a 14 oz, 400g can of crushed tomatoes) half a head of garlic 1 large thumb of ginger 5-10 green cardamom pods 2-3 bay leaves 1 teaspoon cumin seeds 1/2 teaspoon of coriander seeds 1/2 teaspoon black peppercorns 1/2 teaspoon mustard seeds 1/2 teaspoon fenugreek seeds 1 black cardamom pod 1 small piece of cinnamon stick 1/2 teaspoon turmeric tomato paste ground amchoor or lemon juice salt sugar ghee (or of oil) fresh cilantro Soak the chickpeas for at least a few hours, then boil with a teaspoon of salt until just tender. Put the cumin, coriander seeds, peppercorns, mustard seeds, fenugreek seeds, black cardamom and cinnamon stick into a dry pan and toast over medium heat until fragrant. Cool and grind to a fine powder. Peel and roughly chop the onion, garlic and ginger. Roughly chop the tomato and chiles. Heat some ghee in your widest pan over medium heat and fry your fresh-ground masala along with the turmeric until fragrant. Add the garlic and ginger and fry for a moment, then all the rest of the chopped vegetables. Cook, stirring constantly, until enough water has evaporated that things are staring to brown. Deglaze the pan with a little water, then puree the contents. If you want a smooth sauce, push it through a fine mesh strainer. Clean the pan, head some more ghee and fry the green cardamom pods and the bay leaves until fragrant. Put in about a tablespoon of tomato paste and fry it for moment before stirring in the pureed sauce. Stir in the cooked chickpeas along with as much cooking water as you want for the sauce texture you like, and simmer for about 15 minutes. Stir in amchoor powder (or lemon juice), salt, a pinch of sugar and fresh cilantro to taste. Remove the bay leaves and serve over basmati rice.

Once it gets warm add the water into a bowl. In a bowl, add chickpeas, warm water and let it soak for 30 minutes. For Boiling In a cooker or sauce pot, add soaked chole, water, degi red chili powder, turmeric powder, crushed garlic, green chili, ginger, baking soda and byadgi red chillies, black cardamom. Cook it for 5-6 whistles. For Ginger Garlic Paste In a mortar pestle, add garlic, ginger, green chilli, and salt to taste. Make a coarse paste and keep it aside for further use. For Curd Mixture In a bowl, add curd, degi red chili powder, coriander powder, turmeric powder and mix well. Keep aside for further use. For Tempering In a shallow pan or kadai, add oil, ghee. Once it gets hot, add bay leaf, black peppercorns, cinnamon sticks, dry red chillies and let it splutter well. Now, add ginger garlic paste, onions, green chillies. Cook it on a slow flame for 30 seconds until light golden in color. Now, add tomatoes, pinch of salt, degi red chili powder and sauté well. Add curd mixture and mix well and cook on low flame for 2-3 minutes. Add water, tender coriander stems, salt to taste and let it cook for 10-15 minutes. Add coriander leaves, black pepper powder and mix well. Once done transfer it into a serving dish, garnish it with onion rings, ginger juliennes ,coriander sprig. Serve hot with bhature, rotis or chapati. Ingredients: 3 pieces garlic 1 small piece ginger 1 onion 1 1/2 cup puréed tomatoes 3 tbsp olive oil 1 tsp coriander seeds 2 cardamom pods 2 bay leaves 1/2 tsp pink salt 1/2 tsp chili powder 2 tsp paprika 1/2 tsp cinnamon 1/4 tsp turmeric 2 tsp garam masala 1 1/2 cups canned chickpeas 1/3 cup coconut milk few sprigs cilantro Directions: 1. Finely chop the garlic and ginger. Dice the onion 2. Heat up a sauté pan on medium heat. Then, add the olive oil 3. Add and cook the coriander seeds, cardamom pods, and bay leaves for about 1 min 4. Add the diced onion and the pink salt. Sauté for 3-4min 5. Add the garlic and ginger. Sauté for another minute 6. Turn the heat down and add in the chili powder, paprika, cinnamon, and turmeric. Then, give everything a good mix 7. Add in the puréed tomatoes followed by the garam masala 8. Turn the heat back up to medium and stir. Then, add in the chickpeas and cook for about a minute 9. Add in coconut milk. Stir and cook for another 3-4min 10. Bachelor's Chole Masala is very very easy recipe .. U can prepare with in few minutes without sauting .. Recipe in english is given below .. Ingredients Chickpeas -1 1/4 cup Tomato-2  1/2 medium Onion-2 medium Ginger-medium piece Garlic-4-5 cloves Cumin seeds-1/2tsp Kasurimethi leaves-3/4tsp Garam masala-1tsp Coriander Powder-1tbsp Chilli Powder-1tsp Turmeric Powder-1/4tsp Salt-to taste Black Salt-1/4tsp (opt) Dry red chilli-1 Cloves-3 Cardamom -2 Vegetable Oil-1tbsp (opt) Water-4-5 cups Coriander leaves – Lemon Juice-1tbsp Method Method Wash and soak chick peas overnight or minimum 5 hours.. Drain them and keep aside .. In a blender add onion cubes,tomato cubes,ginger,garlic ,cumin seeds,kasuri methi,all powders ,salts along with some water and make a very fine paste.. Add this paste to the chick peas along with dry red chilli(pieces) ,cloves and cardamom and oil … Add water and mix well and cook in medium flame … 6-7 whistle or till done .. When the pressure settles down open the cooker and check whether its well cooked or not .. Then check the salt and add if needed .. Now cook this chole in medium heat till the oil separates .. Finally add lemon juice and sprinkle some coriander leaves … Transfer to a serving bowl and garnish with chopped onion and coriander leaves . Pav Bhaji Recipe : 🤍 Ingredients 2 Onion medium chopped 2 Tomato small chopped 2 Green chillies chopped 1/2 inch Ginger piece chopped 2-4 cloves Garlic roughly crushed 2 bay leaves Dry chickpeas 1.5 cup boiled with 1 tea bag 1 tbsp Oil 2 tbsp Ghee Salt to taste Chole masala 1/2 tsp Cumin powder 2 tsp Red chili powder 1 tsp Coriander powder 1/4 tsp Turmeric powder 2 tsp Dried Anardana 1 tsp Amchur powder 1 tbsp Garam masala Water as required Coriander leaves, finely chopped Method: - In a pan add dry chickpeas 1.5 cup boiled with 1 tea bag and water & salt and cook it for 45 minutes. - In a pan add oil, ghee, bay leaves, onion, ginger pieces, slit chillies, garlic, and mix it well - Add tomatoes and add the dry masalas - turmeric powder, amchur powder, cumin powder, red chili powder, coriander powder, garam masala, salt & dried anardana - Add the chanas to the masala and water and cook it for 8-10 minutes - Mash a few of the chickpeas for consistency - Amritsari Chole masala is ready to be served! Dry red chillies, सूखी लाल मिर्च 1 ½ tsp Tea leaves, चाय पत्ती For Ginger Garlic Paste 1 inch Ginger, peeled & slice, अदरक 4-5 Garlic cloves, लहसुन 1 Green chili, less spicy, हरी मिर्च Salt to taste, नमक स्वादअनुसार For Methi Chole Masala 2 tbsp Oil, तेल ½ tsp Cumin seeds, जीरा Prepared Ginger Garlic Paste, अदरक लहसुन का पेस्ट 2 medium size Onions, chopped, प्याज 1 tsp Kashmiri red chili powder, कश्मीरी लाल मिर्च पाउडर 2 tsp Coriander powder, धनिया पाउडर 1 ¼ cup fresh Tomato puree, ताज़े टमाटर की प्यूरी 3-4 heaped tbsp Everest chole masala, एवरेस्ट छोले मसाला 1 ¼ cup fresh Fenugreek leaves, ताजा मेथी के पत्ते 1 medium Tomato, roughly chopped, टमाटर Salt to taste, नमक स्वादअनुसार ⅓ cup Cooked Chole water, उबले हुए छोले का पानी 1 tsp Dry fenugreek leaves, कसूरी मेथी Pressure Cooked Chole, पके हुए छोले 1 ½ tbsp Ghee, घी Cooked Chole water, उबले हुए छोले का पानी 2 Green chillies, less spicy & slit into half, हरी मिर्च 1 tbsp Coriander leaves, chopped, धनिया पत्ता ½ inch Ginger, peeled & julienned, अदरक For Garnish Ghee (for finishing) घी Ginger, julienned, अदरक Coriander sprig, धनिया पत्ता Chili oil, मिर्च का तेल Onion, प्याज Tomato, टमाटर Lemon wedge, नींबू की फांक Process For Cooking Chole ● In a pressure cooker, add chickpeas, water as required, salt to taste, cinnamon stick, bay leaf, dry red chili. ● In a muslin cloth, add tea leaves and make a potli, ● Add the potli to the chole and cook it for 4-5 whistles. ● Keep it aside for further use. For Ginger Garlic Paste ● In a mortar pestle, add ginger, garlic, green chillies, salt to taste and make a coarse paste. ● Keep it aside for further use. For Methi Chole Masala ● In cast iron or a kadai, add oil, once it's hot , add cumin seeds and let it splutter. ● Add ginger garlic paste and saute for a minute, add onion and saute until translucent. ● Add degi red chili powder, coriander powder and cook. ● Add tomato puree and cook well. Add chole masala and cook for 2-3 minutes. ● Add fenugreek leaves, tomato and saute well. ● Add chole water and cook until thick. Add chole and mix everything well. ● Mash some chole and add ghee. Chana masala or chole masala is a popular vegetable dish in Indian cuisine. The main ingredient is chickpeas. It is fairly dry and spicy with a sour citrus Channa masala, an impressive, fairly dry and spicy dish with a sour tangy taste made with chickpeas. It is a popular Punjabi dish commonly known as chole masala or channay and mostly cooked in Indian and Pakistani cuisines. Channa Masala 🤍 Ingredients 200 grams channa 25 grams channa masala pdr 1 springs coriander leaves 1 pinch cumin 1 tbsp ginger garlic paste 2 number gr chillies 1 number lime 3 tbsp oil 2 number onion 1 to taste salt 2 number tomatoes 1 pinch turmeric (optional) few piece whole garam masala Directions • Soak chana in water overnight or to cook the same day soak them in warm water for at least 5-6hrs • Pressure cook chole • Drain the chole, reserve the liquid • Chop up onion, tomatoes • Heat oil in a deep saucepan and add cumin seeds whole garam masala • When the cumin seeds change color add chopped onion to it and saute till they are brown • Add the Ginger-garlic paste to it and saute for couple of minutes • Add all the tomatoes dry powders to it and saute add salt • Saute the tomatoes till they are soft and mushed up, • Add the chana to the mixture and mix gently so that chole are properly coated in the mixture • Add the reserved water depending on the gravy you need, check and adjust the seasoning • Simmer the stove and cook covered for 5-6 minutes and garnish it with cilantro leaves • Serve it with bhature, puri or chapatti with sliced onion and lemon wedge by the side chole bautra is just awesome - make it a point to make it soon ..
