To the cleaned prawns, add salt, turmeric powder and chilli powder. 4. Mix them well until each prawns is coated with the spice mix. Let it sit until needed. 5. Grind ginger, garlic, shallots, grated coconut, green chillies, red chillies, mint and coriander leaves. 6. Grind them first without water. 7. Now add some water and grind it to fine paste. 8. Grind grated coconut and extract the thick coconut milk. Dilute it with water to have 2 cups of coconut milk. 9. To a pressure cooker, add ghee and oil. 10. To this add, whole spices and onions. 11. Once the onion turns golden brown, add the ground masala paste. Sautè until the raw smell goes. 12. Now add tomatoes and saute them. 13. After few minutes add the spice powders, starting with salt, turmeric powder and coriander powder. 14. Add the marinating prawns to the mixture. Turn the heat to low and mix them. 15. Pour the coconut milk and makes everything. 16. To this add the soaked basmati rice and mixed without breaking the rice. 17. Cover the pressure cooker and cook for 8 minutes on medium low flame. 18. Once the pressure is released open the pressure cooker 19. Aromatic prawn biryani is ready. Ingredients: Shrimp 1 lb fresh large shrimp ½ tsp salt ¼ tsp turmeric ½ tsp shah jeera 2 bay leaves 2 small cinnamon sticks 5 cardamom 5 cloves 8-10 peppercorn 1 medium sliced onion 1 tsp garlic 1 tsp ginger 4-5 green chili paste 1 small chopped tomato ½ tsp ground coriander ½ red chili 1 tsp salt 2 tbsp coconut paste Rice ½ tsp shah jeera 2 small bay leaves 2 small cinnamon sticks 4 cardamom 4 cloves 3 tbsp sliced onion 3 cup-soaked rice ½ tsp ginger 6 cups hot water 1 tsp salt 4 tbsp friend onions 2 tbsp ghee 4-5 green chilies 2 tbsp food coloring 2 tbsp fresh coriander 1 tsp garam masala Instructions: 1. Mix the shrimp pieces with salt and turmeric 2. Transfer the shrimp to a frying pan with a bit of cooking oil for 3. Once the shrimps are cooked, remove from pan 4. Stir in the shah jeera, bay leaves, cinnamon sticks, cardamom, cloves, peppercorn, and sliced onion 5. After 2-3 minutes add garlic, ginger, green chili paste, chopped tomato, ground coriander, red chili, salt, coconut paste and a splash of water 6. Add the shrimp to the saucepan and remove from heat 7. It a large pot, drizzle cooking oil, temper the shah jeera along with bay leaves, cinnamon sticks, cardamom and cloves until fragrant 8. Add sliced onion, rice that has been soaked for 30 minutes, ginger, hot water and salt 9. Cook for 6-7 minutes on high heat and stir occasionally 10. Cook for another 10 minutes on low heat with lid on 11. Add fried onions, shrimps, ghee, green chilies, optional food coloring, freshly chopped coriander leaves and garam masala 12. Cook for 10 more minutes on low heat with lid on 13. Jhinga/Prawn Biryani Serves 4-5 Recipe in English: Ingredients: -Cooking oil ½ Cup -Badi elaichi (Black cardamom) 1 -Hari elaichi (Green cardamom) 2 -Darchini (Cinnamon stick) 1 -Sabut kali mirch (Black peppercorns) ½ tsp -Badiyan ka phool (Star anise) 1 -Laung (Cloves) 3-4 -Tez paat (Bay leaves) 2 -Zeera (Cumin seeds) ½ tbs -Adrak lehsan paste (Ginger garlic paste) 1 tbs -Hari mirch (Green chilies) crushed 1 tbs -Tamatar (Tomatoes) peeled & grinded 3 medium -Paprika powder 1 tbs -Namak (Salt) ½ tbs or to taste -Haldee powder (Turmeric powder) 1 tsp -Dhania powder (Coriander powder) ½ tbs -Zeera (Cumin seeds) roasted & crushed 1 tsp -Dahi (Yogurt) whisked 1 Cup -Pyaz (Onion) fried ½ Cup -Jheenge (Prawns) ½ kg washed -Garam masala powder 1 tsp -Chawal (Rice) sella 2 Cups (soaked & boiled until ¾ th done with whole spices & salt) -Pyaz (Onion) fried handful -Hara dhania (Fresh coriander) ¼ Cup -Zarda ka rang (Yellow food color) ½ tsp +Pani (Water) 1 tbs -Pyaz (Onion) fried handful Directions: -In pot,add cooking oil,black cardamom,green cardamom,cinnamon stick,black peppercorns,star anise, cloves,bay leaves,cumin seeds and mix well. -Add ginger garlic paste and mix well. -Add green chilies and mix well. -Add grinded tomatoes and mix well. -Add paprika powder,salt,turmeric powder,coriander powder and cumin seeds,mix well and cook for 5 minutes. -Ad yogurt and mix well. -Add fried onion,mix and cook for 2-3 minutes. -Add prawns and mix well. -Cover and cook on low flame for 3-4 minutes then cook until oil separates. -Add garam masala powder,mix well & set aside. -In pot,add half quantity of boiled rice,fried onion,prawn gravy masala,fresh coriander,remaining boiled rice,dissolve yellow food color and fried onion. -Cover and steam cook on low flame for 6-8 minutes & serve! This spicy rice dish cooked in mouth-watering prawn curry is an exotic biryani for sea food lovers. PRAWN BIRYANI Ingredients 250 grams medium prawns, peeled and deveined 3 cups cooked Basmati rice Salt to taste ½ teaspoon turmeric powder 1 tablespoon lemon juice 2 tablespoons ghee + for drizzling 1 teaspoon cumin-mustard seeds 1 inch cinnamon 6-7 black peppercorns 4-5 cloves 1 bay leaf ½ blade mace (javitri) 5-6 green cardamoms 1 black cardamom 1 star anise 1 large onion, sliced 1 tablespoon ginger-garlic paste 1 large tomato, chopped 2 teaspoons red chilli powder 2 teaspoons coriander powder 3-4 tablespoons yogurt + for serving 2 teaspoons biryani masala 1 tablespoon chopped fresh coriander leaves 1 tablespoon chopped mint coriander leaves ¼ cup fried onions + for spreading and garnishing 1 tablespoon saffron water 1 teaspoon rose water 1 teaspoon screwpine (kewra) water 1 inch ginger, cut into thin strips Fresh coriander leaves as required Whole wheat flour dough as required Method 1. Put prawns in a bowl. Add salt, ¼ teaspoon turmeric powder and lemon juice and mix well. Set aside to marinate. 2. Heat 2 tablespoons ghee in a deep non-stick pan. Add cumin-mustard seeds, cinnamon, peppercorns, cloves, bay leaf, mace, cloves, green cardamoms, black cardamom and star anise and sauté till fragrant. 3. Add onion and sauté till golden brown. Add ginger-garlic paste and sauté for 1 minute. 4. Add 2-3 tablespoons water and sauté the mixture for 1 minute. Add tomato and sauté till soft and pulpy. 5. Add chilli powder, coriander powder and remaining turmeric powder and sauté for 1 minute. Add 2-3 tablespoons water, mix and cook for 2-3 minutes. 6. Add 3-4 tablespoons yogurt, mix and cook for 1-2 minutes. Add marinated prawns, mix and cook for 1 minute. 7. Add biryani masala, mix and cook for 1-2 minutes. Add salt and mix. Add coriander leaves and mint leaves and mix. Add ¼ cup fried onions and mix well. 8. Spread cooked rice on top of the prawn mixture, drizzle some saffron water and kewra water and lightly mix the above layer. 9. Spread ginger strips, some coriander leaves and fried onions on top. Drizzle some ghee, cover the lid sealed with wheat flour dough and cook on low heat for 10-15 minutes. 10. Garnish with fried onions and coriander leaves and serve hot with some yogurt. Prawns Fry Biryani | Prawn Biryani Recipe | Restaurant Style Prawns Biryani | Simple Prawns Biryani | How To Make Prawns Biryani | Shrimp Biryani | Prawns Biryani Recipe | Prawns Dum Biryani Ingredients for Prawns Biryani: (Tsp-Teaspoon; Tbsp-Tablespoon) - Prawns/Shrimp, shelled & deveined- 600-650 gms. nett (1 kg gross with head & shell) - Basmati or long grained rice- 3 US cup measure or 500 gms For the Prawn Fry Mix: - Ginger garlic paste- 2.5 tsp - Turmeric powder- 1/2 tsp - Red Chilli powder- 2.5 tsp - Coriander powder- 2.5 tsp - Garam masala powder- 3/4 tsp - Salt- 1.25 tsp - Chopped coriander leaves- 3 tbsp - Chopped mint leaves- 3 tbsp - Juice of 1/2 lemon- 2 tsp For cooking the Biryani: - Green cardamom- 5 - Cinnamon- 3 - Cloves- 6 - Star Anise- 2 - Bay leaves- 3 (cut) - Onions sliced- 4 medium onions (around 300 gms) - Ginger garlic paste- 2.5 tsp - Green chillies cut into 1” pieces- 3-4 - Coriander powder-2 tsp - Garam masala powder- 1/2 tsp - Mint leaves- 3 tbsp - Coriander leaves chopped- 2 tbsp - Curry leaves chopped-2 tbsp - Salt- 2.5 tsp - Oil- 2 + 3 tbsp oil - Ghee- 2 tsp Preparation: - Clean & devein the prawns. Wash & leave in a colander for the water to drain. - Soak the Basmati Rice for 30 mins. - Slice the onions & chop the green chillies, coriander & curry leaves. - Take out the mint leaves, chop half of it. Process: For the prawn fry mix- - Heat 2 tbsp oil in a pan & add the prawns. - Fry it on high heat for around 1 min till water dries up. - Add 2.5 tsp ginger garlic paste, mix & fry for 2 min on medium heat. - Add the Turmeric, Red Chilli powder, 2.5 tsp Coriander powder, 3/4 tsp garam masala powder & 1.25 tsp salt. - Mix & fry on low heat for around 2 mins. - Add 3 tbsp each of chopped coriander leaves & mint leaves, juice of 1/2 a lemon (2 tsp) , switch off heat. Give a mix & take it out on a plate. For the Biryani: - Heat 3-4 tbsp oil in a heavy bottomed pan and add the whole garam masalas. Once it splutters, add the sliced onions & fry on medium heat for around 10-12 mins till it starts turning brown. - Add 2.5 tsp ginger garlic paste & fry on low heat for around 2 mins. - Now add the cut green chillies & mint leaves & continue to fry on low heat for another minute. - Add 2 tsp coriander powder and add a splash of water to prevent it from burning. - Fry on low heat for 1 min. - For 3 US cups (500 gms) basmati rice, add 4.5 US cups (1000 ml) water & let it come to a boil. - Add 2.5 tsp salt & 1/2 tsp garam masala powder. Mix well. - Once the water is on a boil add the drained rice, mix well & cook on medium heat for around 4-5 mins till the water nearly dries up. - Add the cooked prawns mixture, chopped coriander & curry leaves. Mix well and cover & cook on low heat for around 10 mins till the rice is cooked. You can remove the lid and give a mix once in between. In the same pan add all the whole spices followed by the sliced onions saute it until dark golden brown. 6. Add sliced tomatoes, salt and whole green chillies to the pan cook it until oil separates. 7. Add in all the dry masalas continue to cook until the raw smell goes off. 8. Add 3/4th of mint and coriander, followed by coconut milk and washed rice. 9. Pour in the water and adjust the seasoning at this point close the lid and let it cook for 15 mins. 10. Remove the lid add in the remaining mint and coriander and keep it for dum for 10 mins 11. Serve it hot with raita. Add 1 tsp of cashew nut paste Add 4 tomato slices Add 1 tb spn of fried cashew nuts Add 1 tb spn of raisins Add little bit of water and take Half of the masala and keep a side Now add ½ cup of coconut milk Add 3 cups of boiled rice Add fried prawns Add some brown onions Add 1 tsp of chopped coriander leaves Add some more rice Add prawns add lime juice And put on lid cook for 5 minutes. Learn How To Make Chemmeen Biryani Recipe, a Kerala Style Recipe of Prawns Biryani aka Malabar Prawns Biryani from Chef Smita Deo only on Get Curried. Ingredients:- For the rice:- 5 cups of long grain or basmati rice 5 cups of water 10 cloves 4 pods of green cardamom 1” cinnamon 4 bay leaves 2 large onions finely sliced Juice of 1 lemon Salt to taste 1 tbsp ghee For the marination:- 1 kg prawns, shelled, deveined and washed 2 tbsp chilli powder 1 tsp turmeric powder 1 tbsp coriander seed powder Juice of 1 lemon Salt to taste 1 tbsp ghee Oil for frying For the gravy:- 5 medium onions sliced 10 spicy green chillies 2” ginger 10 pods of garlic 1 tsp chilli powder 1 tbsp coriander seed powder ½ tsp turmeric powder ¼ cup mint leaves chopped ½ cup coriander leaves chopped 4 tbsp ghee For Biryani Masala:- 1” cinnamon 8 pods of green cardamom 2 pods of black cardamom 10 cloves 2 tsp caraway seeds 2 tsp fennel seed 2 bay leaves 2 star anise ½ tsp nutmeg 2 mace For Garnishing:- 1 cup fried onions Handful of coriander leaves finely chopped Handful of mint leaves finely chopped 10 strands of saffron ¼ cup warm milk Method:- 1. Soak the rice for 30 minutes and drain. 2. Heat ghee and add the sliced onions and all the spices to it. Sauté for a few minutes and then add the drained rice and sauté till the rice combines well with the spices. 3. Heat 10 cups of water and add it to the rice. Add salt, lemon juice and cover and cook till the rice is cooked and separate. 4. Remove the excess water. 5. For the prawns combine the ingredients for the marinade and marinate the prawns for 30 minutes in the refrigerator. 6. Make a paste of the ginger, garlic and the green chillies. 7. Heat oil and shallow fry the prawns drain off the excees oil and keep it aside. 8. In the same oil, fry the onions till they turn slightly golden, then add the ginger, garlic and green chilli paste and sauté. 9. Add the chopped coriander and mint leaves and combine well. 10. Add the biryani masala, turmeric powder, chilli powder, salt and sauté till the raw smell goes off. 11. Add the fried prawns and mix well. 12. If the gravy is too dry add some water to it. 13. Cover and cook on a low flame for 5 minutes till the oil separates. 14. Mix the saffron in the warm milk and keep aside. 15. To assemble the biryani put a layer of the prawns, then a layer of rice, sprinkle some biryani masala, mint and coriander leaves and fried onions. 16. Make another layer similarly and then pour the ghee, milk and cover and cook it on a dum on a low flame for 15-20 minutes and serve with a cold salad. Chemmeen Biryani is ready to eat!
